Caseum Maiorum is an ancient cheese, a true find in the culture of cheese making, having survived over the course of centuries thanks to being passed from generation to generation.
Like our elders, we use the same techniques they did that made, and make this cheese so grand. It is during the aging process that the cheese achieves its qualities: day after day the cheese dries and becomes almost crumbly with a sharp flavor and intense odor. Its external appearance changes too, the crust takes on a slightly brown color as it retains is cylindrical form that weighs between 3 and 5 kg. It is not always uniform in appearance; it can have slight valleys and softened edges, which should not be considered a defect in the cheese but an attribute and more precious according to the origins of the craft.
It is these characteristics that decide its personality. Caseum Maiorum is a very nutritious cheese that is very flavorful in small quantities. It can be part of a balanced diet and even be used as a meat substitute because of its high protein content.
