A cheese typically produced by our local farmers. The Sola or Sora is in the form of an irregularly shaped rectangle made from cows or goats milk. The crust flowers with many colored molds, as it is dependent on the aging process and the natural humidity level in the cantina. Each form weighs between 2 and 3 kg. |

Meaning "hard head" in our local dialect. The cheese is riddled
with small holes or "eyes," is the color of white hay, has an
intense smell, and pleasant flavor. It has a brown crust when mature,
typical of the cheese aged in our Cantina. Each form is fire branded with
the word Testun, a symbol of the product's originality. |
